As a wild food researcher and culinary aficionado with a background in the performing arts Leo’s approach to foraging is engaging, fun, and informative.

Teaching you how to identify wild food and educating on the history, science and nutrition of our wild world.

What to expect


A 2.5 hour introduction to mushroom foraging including species of plants and trees. Followed by seasonal wild food tasters, examples of menus are further down the page. 

This is an especially generous season giving us a fresh flush of greens along with the much anticipated mushroom hunting season ! 

You will learn how to safely identify a range of fungi including edible, toxic species and their lookalikes. Covering how to best photograph for your own reference you will leave with a deeper understanding of how to continue a mushroom foraging journey by yourself. 

Due to the nature of weather dependant fungi we will also include stops at various species of plants and trees during the walk to discuss their uses; culinary, medicinal, historical, chemical and nutritional profiles.

Location

Wild Weald Wood is an 85-acre private and semi-ancient woodland. It’s an idyllic historic site shaped by Roman potteries, medieval iron work and centuries of rural craft. 

With a wide diversity of tree and fungi species it grants us an ideal location for mushroom hunting!

What to bring

The rain won’t stop us walking! Please check the weather and dress appropriately!

Bring water for the day and snacks if you feel you will need them, there will be tasters but not a full lunch course.

We encourage taking notes using either your phone or a notepad!

How the day will run

Arrival time is 9:45am. The exact location will be in your email after booking.

We start at 10am with a guided tour of our ancient woodland covering identification, historical and scientific teachings on a case-by-case basis. 

The walk will finish around 12:30pm. 

Concluding with seasonal, handmade wild food tasters and a recap of all our finds for the day allowing a chance to answer any further questions you may have.

Wild Tasters

These are all foraged, fermented and hand-made by Leo.

One of the joys of wild food is how seasonal it is. Tasters change from course to course, past menus have included:

  • Lacto fermented hogweed cashew cream

  • Homemade ancient grain artisan bread

  • Wild garlic and cow parsley pickled chimmichuri

  • Hawthorn Ketchup and Nettle hummus crackers

  • Wild Garlic and Nettle tear and share pastries

  • 30 Ingredient salad w/wild rose vinegar dressing

  • Hedgerow summer rolls

  • Cleaver's spring tonic

  • Naturally sparkling and fermented wild sodas.

  • Wisteria flower water tonic

  • Magnolia petal sushi

  • Violet jelly mushroom sweets

  • Elderflower cream “cheesecake”

  • Hand foraged sweet woodruff shortbread

Facilities and parking

There are both toilets and water filling facilities on site. Parking is free, this location is best accessed by a car.
